Introduction 

For the last fifteen years, I’ve felt like one of those wild-eyed Hawaiian surfers riding a wave that, instead of cresting, just keeps gathering momentum and strength. That wave is the food-as-medicine movement, the idea that what we eat can keep diseases at bay, including cancer. When I wrote my first two books— One Bite at a Time and the first edition of The Cancer-Fighting Kitchen—the initial goals were modest, yet vital. What we knew at the time (2003–2008) was that 80 percent of cancer patients were malnourished. Indeed, most of the people who picked up those books, either as caregivers or recently diagnosed patients, had but two questions regarding food that burned in their minds: Am I going to enjoy eating during treatment? and Heck, am I going to be able to eat at all? 

These were—and still are—crucial concerns. This book is all about enhancing your appetite during treatment. The key concept is what I call “the power of yum,” the mind-blowing notion that great nutrition and fabulous taste can joyfully coexist on the plate. As one of my colleagues noted years ago, “If food doesn’t taste great, people won’t eat it, no matter how good it is for them.” Essentially, I work as a culinary translator, teaming up with oncologists, nutritionists, and cancer wellness professionals to help their patients stay well fed during treatment by translating nutritional recommendations into delicious, nourishing meals. The positive results I’ve seen in thousands of patients have been heartening. People who had completely disconnected from food have been brought back to the table and nourished by engaging three easy-to-follow ideas: 

   1. Make the food appealing to all the senses. 
   2. Offer lots of choices to fit often changing tastes and appetites (think small, easily stored, and reheated nutrient-dense portions). 
   3. Create ways that patients or caregivers can comfortably shop for, prep, and cook said meals. 

But now, nearly a generation into the food-as-medicine journey, it turns out that there’s far more to “the power of yum” than taste. I’ve watched as research into food and how it can restore and maintain health (aka sustainable nourishment) has matured in numerous mainstream peer-reviewed journals including the Journal of the American Medical Association and the New England Journal of Medicine. I’ve chronicled this explosion of knowledge in three more recent cookbooks: The Longevity Kitchen, The Healthy Mind Cookbook, and Clean Soups. What I’ve learned researching those books—such as the wonderful roles herbs and spices play in improving health—also applies to those fighting cancer. Many people, not surprisingly, become motivated to eat well when taking on a disease. I try to capitalize on that motivation to help folks realize that the very foods that weed the body’s garden of cancer can create long-term downstream benefits that help ward off recurrence.


Kale with Sweet Potatoes and Pecans

If there’s a safe haven in the vegetable kingdom, it’s sweet potatoes. I mean, what’s not to love? Sweet taste, beautiful color, and fantastic nutrition, not to mention a creamy texture that allows you to introduce chopped greens in a nonthreatening manner. Here, I’ve added kale, which has outstanding anticancer properties, and some zippy ginger, which aids digestion.

SERVES:
4
PREP TIME: 15 minutes
COOK TIME: 10 minutes

2 tablespoons extra-virgin olive oil or unrefined virgin coconut oil
1 teaspoon minced fresh ginger
1 cup peeled and finely diced Garnet sweet potato
1⁄8 teaspoon ground cinnamon
1⁄4 cup Magic Mineral Broth (page 49) or water
3 cups cleaned, stemmed, and chopped dinosaur kale, in bite-size pieces
1⁄4 teaspoon sea salt
2 tablespoons golden raisins
1⁄4 teaspoon maple syrup
2 tablespoons ground pecans, for garnish 

Heat the oil in a large sauté pan over medium heat, then add the ginger and sauté for 30 seconds, just until aromatic. Add the sweet potato, cinnamon, and broth and sauté for about 1 minute. Add the kale, salt, and raisins and sauté until the kale is a darker shade of green and the sweet potatoes are tender, about 5 minutes. Stir in the maple syrup, then taste; you might want to add another pinch of salt if desired.

Serve garnished with the ground pecans.

COOK’S NOTE:
The ground pecans have the same texture as a sprinkling of finely grated cheese. If you’d like something crunchier, place 1⁄4 cup of pecans on a baking sheet and toast at 350°F for 7 to 10 minutes, until aromatic and slightly browned. Chop coarsely before sprinkling on this beautiful dish.

Store in a covered container in the refrigerator for 5 days.

I''ve been lucky enough to not fight that battle but I still use this book regularly. I have the first edition and love it so much I couldn''t wait to see what was new in this second one. I''m so excited! This update includes some new recipes, some updated recipes and lots and lots of good information on how food is medicine. It''s all delivered with Rebecca''s sense of humor which keeps you reading. I mean, who really reads what the author says in a cookbook?! I want to get to the recipes. But not with Rebecca''s books. She imparts proven scientific knowledge in a way that makes you unable to put it down or jump right to the recipes. So, if you have the original version, you will enjoy some of the new aspects in this one. If you don''t have the original, you must get this. The recipes are approachable-my daughter has been cooking from it since she was 9. The flavors are phenomenal, and after you''ve enjoyed one of the meals you''ll know you''ve done something good for your body too! The Magic Mineral Broth recipe has been a daily mainstay in my cancer-fighting diet...drinking at least 16 ounces of it daily. I had my first surgery on a Tuesday, and was back to work the following Monday, so I had a quick recovery time. I''ve been doing daily chemo and radiation for the past 3 weeks, and so far the side effects are pretty much non-existent. My Oncologist wanted to monitor me closely for side effects from the chemo, since I''m getting such a high dose. I saw him again yesterday, at the 3 week point, and he was absolutely ecstatic that I was feeling no side effects and didn''t have redness or blistering on my hands. My Radiation Oncologist was also extremely happy to see that the side effects from the radiation (13 treatments so far) have basically been no more severe than a little tingling in my skin...even though the tumor is definitely dying, since I see my symptoms improving daily. Did the Magic Mineral Broth make that possible? I don''t know for sure, but it definitely hasn''t hurt. Oh...and contrary to what some negative reviews have said, the broths are extremely easy to make. Most of them require only a washing and rough chopping of the veggies...the peels stay on because that''s where a lot of the good nutrients are. Aside from that, if you can boil water, you''re going to be able to make the broths. With the help of the recipes in this book, we''re going to beat this thing! Keep a positive attitude and never quit!

Also there’s a lot of reviews that mention hard to get ingredients.... well some of those ingredients are specific to help with symptoms of chemo and it’s worth going out of your way to find. I order the ingredients I don’t recognize off of amazon! Like kudzu root powder.... and it has other purposes, it sort of works like corn starch for thickening sauces... but it’s anti nausea! It works! Love it! I’m a huge fan!

I am so glad I discovered Rebecca Katz! This updated cookbook is the most reasonable "eating and cancer" book I''ve seen yet. It actually imparts knowledge about different food ingredients and why they are helpful and healthful. In comparison, I bought a cookbook from the American Cancer Society and was appalled to see the main protein sources were just tons of cheese or milk and the majority of recipes were very high in sugar (as much as 52g per serving!) While I understanding that some days of the treatment cycles will necessitate a focus on amount of calories over quality of calories, I think Katz''s book provides great options for getting quality food calories in all situations. There are pages with table format references to recipes by side effect symptom (ie constipation, sore mouth etc.) AND general, related health considerations (such as inflammation and blood sugar regulation). The extensive information provided in addition to the recipes is well written, interesting, current and very useful! The photographs that accompany some dishes are beautiful and the layout is nice. Nutritional information is included with each recipes (I would have preferred a table format to paragraphs - 3rd edition please?!) and a great addition of storage method and storage time information is included as well.

It''s important to note that many recipes involve a lot of prep. Each recipe notes a prep and cook time but I found it takes much longer than what is listed (I may just be too slow?!) many are listed as 10 minute prep so if you''re good in the kitchen this may not be an issue for you! Also, some ingredients you might not find on your grocer''s shelf or hard to find if you have limited choices in food markets. I was able to find most everything by going to regular grocery stores and the local co-op market. Katz does provide a list of online resources and offers substitution ideas so most of the recipes are flexible. There are also informational pages describing the possibly less familiar items and why they are healthful.

Since, as noted, many recipes involve quite a bit of prep time, being able to cook ahead and store properly allows the patient/care giver to cook when feeling up to it and then store so as to have healthy food available quickly when needed. This book is also a great resource for care givers or people wanting to bring a meal to a friend to provide a nourishing, tasty dish. I almost took off a star for the complexity of many of the meals but love it otherwise so much I stuck with 5 stars. You can also check out Katz''s online videos to get to know her a little and watch her make some of the recipes. Definitely a sensible, information packed and well researched cookbook - definitely recommend!

This was recommended to me as a healthy cookbook with tasty recipes - which it is - so I bought it although no-one in my circle has cancer. However, it''s written for Americans, which means that quantities are only in cups and oven temperatures are only in Fahrenheit. Added to that, the recipes, which look quite quick and easy to prepare at first glance, have ingredients such as ''freshly minced'' or ''finely diced'' or ''cooked'' so none of the prepping is included in the dish! The first chapters are very helpul, explaining the values of many ingredients - which is useful whether ot not you have cancer - and there are some interesting toppings to add to basic recipes. I''ve tried one recipe (the chickpea burgers which weren''t amazing) with tomato mint chutney (which was very tasty) but I won''t be using this book regularly. For the British market it needs to give weights in grams (even lbs and oz would be more helpful than cups!) and oven temperatures in centigrade and gas mark to avoid having to mess about with calculating weights and temperatures beforehand!!
